Ingredients
  

  • 2 large ripe bananas mashed
  • 1 to 2 tbsp pure maple syrup optional
  • 2 cups unsweetened shredded coconut
  • 13 oz dark chocolate bar chopped (or 1 cup chocolate chips)
  • 1 tsp coconut oil

Equipment

  • Baking sheet
  • Double boiler or microwave-safe bowl
  • Spoon or cookie scoop

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Step 3: Add the unsweetened shredded coconut and maple syrup (if using) to the mashed bananas. Mix until well combined.
  4. Step 4: Portion out the cookie dough onto a baking sheet lined with parchment paper and flatten slightly.
  5. Step 5: Bake the cookies for 12-15 minutes, or until golden brown around the edges.
  6. Step 6: Melt the chocolate and coconut oil together in a double boiler or microwave-safe bowl until smooth.
  7. Step 7: Let the cookies cool, then drizzle the melted chocolate over them.

Notes

  • Store in an airtight container at room temperature for up to 3 days.
  • Freeze for up to 3 months for longer storage.
  • Reheat in the microwave for a few seconds if desired.
