In a mixing bowl, combine the cubed eggplant with the extra virgin olive oil, dried rosemary, dried thyme, Hungarian paprika, salt, and ground black pepper. Toss until well-coated.
Preheat your air fryer to 375°F (190°C) for about 5 minutes.
Carefully add the seasoned eggplant cubes to the air fryer basket in a single layer. Air fry for 15-20 minutes, shaking halfway through.
Check for doneness after 15 minutes; it should be golden brown and crispy. Air fry longer if desired.
Remove the air-fried eggplant from the basket and let it cool slightly. Serve warm as a side dish or in salads.
