Air Fryer Chicken and Broccoli

This Air Fryer Chicken and Broccoli is a quick, healthy meal bursting with flavor! Juicy chicken in teriyaki sauce served over warm rice.

Ingredients
  

  • 1 lb chicken breast Cut into 1-inch cubes
  • 1 head broccoli Cut into florets
  • 1 cup teriyaki sauce Divided for marinating and drizzling
  • Salt and pepper To taste
  • 2 cups cooked white rice Kept warm

Equipment

  • Air fryer
  • Mixing Bowl
  • Spatula or Tongs
  • Rice cooker or pot

Method
 

  1. In a mixing bowl, combine the cubed chicken breast and half of the teriyaki sauce. Marinate for at least 15 minutes.
  2. While the chicken is marinating, wash and cut the broccoli into florets. Optionally, toss with salt and pepper.
  3. Preheat your air fryer to 380°F (190°C).
  4. Place the marinated chicken cubes in the air fryer basket and cook for 10 minutes, shaking halfway through.
  5. Add the broccoli florets to the air fryer and drizzle more teriyaki sauce over them. Cook for an additional 5-7 minutes.
  6. Serve the chicken and broccoli over warm rice and drizzle with remaining teriyaki sauce.

Notes

  • Marinate the chicken up to 24 hours for deeper flavor.
  • Prep broccoli ahead and store in an airtight container.
  • Leftovers keep well in the fridge for up to 3 days.
