Ingredients
  

For the Sauce:
  • 12 ounces cauliflower florets (about 1 small cauliflower)
  • ¾ cup grated Parmesan cheese
  • ½ cup extra-virgin olive oil
  • 2 cloves garlic (freshly minced)
  • 1 teaspoon Dijon mustard
  • 3 tablespoons unsalted butter
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon sea salt
  • 1 to 1½ cups reserved pasta cooking water
  • freshly ground black pepper (to taste)

Method
 

Instructions
  1. Step 1: Cook the Cauliflower - Start by bringing a large pot of salted water to a boil. Add the cauliflower florets and cook until tender, about 8-10 minutes. Drain the cauliflower, reserving about 1½ cups of the cooking water for later use.
  2. Step 2: Sauté the Garlic - In a skillet over medium heat, melt the unsalted butter and add the minced garlic. Sauté for about 1-2 minutes until fragrant, being careful not to let it burn.
  3. Step 3: Blend the Sauce - In a blender or food processor, combine the cooked cauliflower, sautéed garlic, grated Parmesan cheese, olive oil, Dijon mustard, lemon juice, sea salt, and a few cracks of black pepper. Blend until smooth and creamy, adding the reserved pasta cooking water a little at a time until you reach your desired consistency.
  4. Step 4: Combine with Pasta - Toss the Alfredo sauce with your favorite pasta, adding more reserved cooking water if needed to coat the pasta evenly.
  5. Step 5: Serve and Enjoy - Plate your pasta and top it with additional grated Parmesan cheese and a sprinkle of freshly ground black pepper. Enjoy your creamy, delicious Alfredo sauce!

Notes

  • For a different flavor, try swapping some cauliflower for broccoli.
  • Fresh spinach can be blended in for added nutrients.
