Ingredients
  

  • 2 large egg whites at room temperature
  • 2 eggs (white & yolk), at room temperature
  • 2 cups almond flour (200g)
  • 2 tablespoons butter (30g), melted, or olive oil
  • 4 tablespoons psyllium husks (20g) or 2 tablespoons psyllium husk powder
  • 1 teaspoon baking powder
  • 1 teaspoon xanthan gum
  • 1 pinch salt
  • ½ cup warm water (120ml)

Method
 

  1. Preheat your oven to 350°F (175°C) for even baking.
  2. Grease your loaf pan with butter or oil, or line it with parchment paper.
  3. In a mixing bowl, combine almond flour, psyllium husks, baking powder, xanthan gum, and salt. Whisk until well blended.
  4. In a separate bowl, whisk the egg whites and whole eggs until frothy.
  5. Add melted butter and warm water to the egg mixture, stirring well. Gradually add the dry ingredients to the wet mixture, mixing until a thick batter forms.
  6. Let the batter rest for about 5-10 minutes for better texture.
  7. Transfer the batter to the prepared loaf pan, smoothing the top with a spatula.
  8. Bake for 30-35 minutes, or until golden brown and a toothpick comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
