  • 6 cups cornflakes gluten-free if needed
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 large eggs beaten
  • 2 tablespoons hot sauce your favorite brand
  • 1/2 cup hot sauce for buffalo sauce
  • 6 tablespoons salted butter melted
  • 1-2 teaspoons seasoned salt
  • 3/4 teaspoon chipotle chili powder
  • 1/2 teaspoon cayenne pepper optional
  • 2 tablespoons honey
  • Extra virgin olive oil for drizzling
  • Blue cheese or ranch dressing for dipping
  • Sliced green onions for garnish

Method
 

Instructions:
  1. Step 1: Preheat your oven to 425°F (220°C) for that perfect crunch on the chicken.
  2. Step 2: Crush cornflakes in a large mixing bowl. Combine with parmesan cheese, smoked paprika, onion powder, garlic powder, and seasoned salt.
  3. Step 3: In another bowl, beat eggs and mix in hot sauce to create the egg wash.
  4. Step 4: Dip chicken in egg wash, then roll in the cornflake mixture. Place on a baking sheet lined with parchment paper.
  5. Step 5: Drizzle olive oil over the chicken and bake for 25-30 minutes until golden brown and cooked through.
  6. Step 6: Melt butter in a small saucepan, then stir in hot sauce, chipotle chili powder, cayenne pepper, and honey. Mix well.
  7. Step 7: Toss baked chicken in buffalo sauce until evenly coated.
