  • 5 cups cornflakes (crushed)
  • 2 tablespoons olive oil
  • 1 cup honey
  • 1/2 cup hot sauce (like Frank's Hot Sauce)
  • 2 tablespoons unsalted butter
  • 1 teaspoon garlic powder (for the sauce)
  • 1 teaspoon cayenne pepper (optional)
  • 1 teaspoon red pepper flakes (optional)
  • 1 teaspoon salt (for the sauce)
  • 1 tablespoon fresh thyme (chopped)

Method
 

Stepwise Method:
  1. Step 1: Prepare the Chicken. Start by preheating your oven to 400°F (200°C). Pound the chicken breasts to an even thickness of about 1 inch. Season both sides with salt and pepper to taste.
  2. Step 2: Set Up the Breading Station. In one bowl, add flour. In the second bowl, whisk together eggs and hot sauce. In the third bowl, combine crushed cornflakes, brown sugar, garlic powder, smoked paprika, and a pinch of salt.
  3. Step 3: Bread the Chicken. Coat each piece of chicken in flour, then dip it into the egg mixture, and finally press into the cornflake mixture until fully coated. Place on a baking sheet lined with parchment paper.
  4. Step 4: Bake the Chicken. Drizzle olive oil over the breaded chicken. Bake for 25-30 minutes until cooked through and the coating is golden brown and crispy.
  5. Step 5: Prepare the Hot Honey Sauce. In a saucepan, combine honey, hot sauce, butter, garlic powder, cayenne, red pepper flakes, and salt. Heat over medium-low, stirring until melted and combined. Stir in fresh thyme.
  6. Step 6: Glaze the Chicken. Drizzle the hot honey sauce over each piece of baked chicken. Return to the oven for an additional 5 minutes.
  7. Step 7: Serve and Enjoy. Let the chicken rest for a few minutes. Serve hot, garnished with additional thyme if desired.

Notes

  • For an extra crispy coating, let the breaded chicken rest for 10-15 minutes before baking.
  • Adjust the hot sauce in the honey sauce according to your spice tolerance.
