Ingredients
  

  • 1 cup unsweetened almond milk or milk of choice
  • 1 cup mixed frozen blueberries or mixed berries
  • 1 small beet, peeled and diced (about 8 ounces)
  • 1 cup frozen pineapple
  • 1 cup plain nonfat Greek yogurt (or non-dairy yogurt for vegan option)
  • 1-2 teaspoons honey (or agave syrup for vegan) optional sweetener
  • chia seeds, hemp seeds, and/or ground flaxseed optional mix-ins
  • 2 tablespoons rolled oats optional for added thickness and fiber

Method
 

  1. Start by peeling and dicing your small beet into manageable pieces. Measure out all your other ingredients—the berries, frozen pineapple, yogurt, and almond milk.
  2. In your blender, add the almond milk first. Next, layer in the diced beet, mixed frozen berries, frozen pineapple, and Greek yogurt. Add any optional sweeteners or mix-ins.
  3. Secure the lid on your blender and blend on high speed until everything is smooth and creamy. Add more almond milk if the mixture is too thick.
  4. Taste your smoothie and adjust sweetness with honey or agave syrup as desired, blending briefly to mix.
  5. Pour your vibrant Beet Smoothie into a glass and enjoy immediately, optionally topping with chia seeds or hemp seeds.

Notes

  • Prepare the beet in advance and store in an airtight container for up to 3 days.
  • Create smoothie packs by portioning out berries, pineapple, and yogurt in a freezer bag.
  • For a lighter smoothie, omit the yogurt and add extra almond milk.
