Preparation Steps:
- Start by taking your NY strip steaks out of the refrigerator about 30 minutes before cooking. Pat them dry with paper towels.
- In a small bowl, combine the salt, pepper, onion flakes, and dried rosemary. Rub this seasoning blend generously over both sides of the steaks.
- Place your cast iron skillet on the stove over medium-high heat. Allow it to heat up for about 5 minutes.
- Add the olive oil to the hot skillet, swirling it around to coat the bottom. Carefully place the seasoned steaks in the skillet and sear for about 4-5 minutes without moving them.
- Using your tongs, flip the steaks and cook for an additional 4-5 minutes for medium-rare. Use a meat thermometer to check for doneness.
- In the last minute of cooking, sprinkle the crumbled blue cheese on top of the steaks.
- Transfer the steaks to a cutting board and let them rest for about 5-10 minutes before serving with French fries and fresh greens.
