Ingredients
  

  • 2 tablespoons olive oil for sautéing the broccoli rabe
  • 2 cloves garlic sliced
  • 1 large head broccoli rabe cleaned and trimmed
  • 2 large roasted red peppers cut into long, thin strips
  • 8 slices sharp provolone for a creamy, tangy cheese layer
  • 8 slices bread your choice, sourdough or whole grain recommended
  • 4 tablespoons butter softened, for a golden crust

Method
 

  1. In a large skillet over medium heat, add 2 tablespoons of olive oil. Once the oil is shimmering, add the sliced garlic and sauté for about 1 minute until fragrant.
  2. Add the cleaned broccoli rabe to the skillet. Sauté for about 5-7 minutes, stirring occasionally until the greens are tender and bright green. Remove from heat and set aside.
  3. On a clean cutting board, lay out 4 slices of bread. Layer 2 slices of provolone on each, followed by a generous portion of the sautéed broccoli rabe and roasted red pepper strips. Top each sandwich with another slice of provolone and finish with the remaining slices of bread.
  4. Spread a thin layer of softened butter on the outside of each sandwich. This will help achieve a beautifully golden crust during grilling.
  5. In the same skillet (or a clean one if preferred), place the sandwiches butter-side down over medium heat. Grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  6. Once grilled to perfection, remove the sandwiches from the skillet. Allow them to cool for a minute before slicing in half. Serve warm and enjoy!

Notes

  • Store leftover sandwiches in an airtight container in the refrigerator for up to 3 days.
  • Reheat in a skillet over low heat or in a toaster oven for best results.
  • Consider using whole grain bread for added health benefits.
