Ingredients
  

  • 1 tablespoon finely chopped fresh oregano (or 1 teaspoon dried)
  • 4 fillets tilapia (about 6 ounces each)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon fresh black pepper
  • 4 teaspoons olive oil
  • 2 cloves garlic (minced)
  • 2 tablespoons whole wheat seasoned breadcrumbs (or gluten-free crumbs)
  • Lemon wedges (for serving)

Method
 

  1. Begin by preheating your broiler to high. Position the oven rack about 6 inches from the heat source.
  2. Line a baking sheet with parchment paper for easy cleanup (optional). Lightly coat the paper or the baking sheet with cooking spray or a little olive oil.
  3. Place the tilapia fillets on the prepared baking sheet. Season both sides with kosher salt and fresh black pepper.
  4. In a mixing bowl, combine the finely chopped fresh oregano (or dried), minced garlic, and whole wheat seasoned breadcrumbs. Drizzle in 2 teaspoons of olive oil and mix until evenly coated.
  5. Spoon the breadcrumb mixture over each tilapia fillet, pressing it down gently to adhere.
  6. Drizzle the remaining 2 teaspoons of olive oil over the topped fillets. Place under the broiler and cook for about 6-8 minutes until cooked through and topping is golden brown.
  7. Remove the tilapia from the oven and let it rest for a minute. Serve with fresh lemon wedges on the side.

Notes

  • You can prepare the breadcrumb mixture ahead and store it in the fridge for up to 2 days.
  • For added flavor, marinate the tilapia in olive oil, lemon juice, salt, and pepper for 30 minutes before cooking.
  • Feel free to substitute the oregano with parsley, basil, or dill for different herbal flavors.
