Ingredients
  

For the Salmon:
  • 4 pieces Salmon fillets (7 oz, skin-on or skinless)
  • to taste Salt
  • to taste Freshly ground black pepper
For the Glaze:
  • 2 tablespoons Light brown sugar
  • 2 tablespoons Dijon mustard
  • 1 teaspoon Lemon zest
  • 1 teaspoon Minced garlic
  • 1 1/2 teaspoons Chopped fresh parsley (optional)

Method
 

Instructions
  1. Start by patting the salmon fillets dry with paper towels. This will help achieve a nice sear. Season both sides of the fillets generously with salt and freshly ground black pepper.
  2. In a small bowl, whisk together the light brown sugar, Dijon mustard, lemon zest, and minced garlic until well combined. The mixture should be smooth and slightly thick.
  3. Place an oven-safe skillet over medium-high heat. Add a drizzle of olive oil and heat until shimmering.
  4. Carefully add the salmon fillets to the skillet, skin-side down if using skin-on. Sear for about 4-5 minutes, or until the skin is crispy and the fish is golden brown.
  5. Flip the salmon fillets over and spoon the brown sugar glaze over the top. Make sure to coat each fillet evenly.
  6. Transfer the skillet to a preheated oven at 400°F (200°C) and bake for an additional 5-7 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Remove the skillet from the oven and sprinkle with chopped fresh parsley if desired. Serve immediately with your favorite sides, such as roasted vegetables or rice, to soak up the delicious glaze.
