Cooking Instructions:
- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: Brush each flour tortilla lightly with vegetable oil on both sides and press into muffin tins to form bowls. Bake for 10-12 minutes until golden and crispy.
- Step 3: In a skillet, cook the ground meat over medium heat until browned. Drain excess fat, add taco seasoning and 1/4 cup of water, and simmer until thickened.
- Step 4: In another saucepan, heat the drained black beans and corn over medium heat until warmed through.
- Step 5: Fill the crispy tortilla bowls with seasoned meat, black beans, corn, avocado, cherry tomatoes, and shredded lettuce.
- Step 6: Top with shredded cheese, a dollop of sour cream or Greek yogurt, and fresh cilantro if desired.
- Step 7: Serve immediately while warm and crispy. Enjoy!
Notes
- Watch the tortillas closely while baking to prevent burning.
- Don’t overfill the bowls to keep them easy to eat!
- For a low-carb option, serve the filling over lettuce instead of in tortillas.
