Ingredients
  

For the Tortilla Bowls:
  • 4 pieces flour tortillas (XL burrito size)
  • 4 tablespoons vegetable oil (or any flavorless oil)
For the Filling:
  • 1 pound ground meat (beef, chicken, turkey, or plant-based)
  • 1 packet taco seasoning
  • 1 can black beans (drained and rinsed)
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes (halved)
  • 1 piece avocado (diced)
  • 1 cup shredded lettuce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 dollop sour cream or Greek yogurt
  • 1 bunch fresh cilantro (optional)

Method
 

Cooking Instructions:
  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: Brush each flour tortilla lightly with vegetable oil on both sides and press into muffin tins to form bowls. Bake for 10-12 minutes until golden and crispy.
  3. Step 3: In a skillet, cook the ground meat over medium heat until browned. Drain excess fat, add taco seasoning and 1/4 cup of water, and simmer until thickened.
  4. Step 4: In another saucepan, heat the drained black beans and corn over medium heat until warmed through.
  5. Step 5: Fill the crispy tortilla bowls with seasoned meat, black beans, corn, avocado, cherry tomatoes, and shredded lettuce.
  6. Step 6: Top with shredded cheese, a dollop of sour cream or Greek yogurt, and fresh cilantro if desired.
  7. Step 7: Serve immediately while warm and crispy. Enjoy!

Notes

  • Watch the tortillas closely while baking to prevent burning.
  • Don’t overfill the bowls to keep them easy to eat!
  • For a low-carb option, serve the filling over lettuce instead of in tortillas.
