Ingredients
  

For the Salmon:
  • 4 fillets salmon fresh and skinless
  • 2 teaspoons Cajun or Creole seasoning
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 1 tablespoon butter
For the Sauce:
  • 1/2 cup finely diced onion
  • 1/2 cup finely diced red bell pepper
  • 2 cloves garlic minced
  • 3/4 cup chicken broth
  • 3/4 cup heavy cream
  • 1/2 teaspoon crushed red pepper flakes optional
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon Cajun or Creole seasoning extra for the sauce
  • 1 to 2 teaspoons cornstarch optional
  • 2 teaspoons lemon juice
  • 1/2 cup freshly grated Parmesan cheese
  • 2 green onions sliced for garnish
  • 1 tablespoon chopped fresh parsley for garnish

Method
 

Cooking Instructions:
  1. Step 1: Season the Salmon - Pat the salmon fillets dry and season both sides with Cajun seasoning and smoked paprika.
  2. Step 2: Sear the Salmon - Heat olive oil in a skillet and cook the salmon for 4-5 minutes on each side until golden brown.
  3. Step 3: Sauté the Vegetables - In the same skillet, melt butter and sauté onion and red bell pepper, then add garlic.
  4. Step 4: Create the Creamy Sauce - Add chicken broth and heavy cream, scrape the bottom of the skillet and bring to a simmer.
  5. Step 5: Season the Sauce - Add crushed red pepper, black pepper, and additional Cajun seasoning. If desired, thicken with cornstarch.
  6. Step 6: Add the Cheese and Lemon Juice - Stir in lemon juice and Parmesan cheese until melted and smooth.
  7. Step 7: Combine and Serve - Return salmon to skillet, spoon sauce over, and garnish with green onions and parsley.

Notes

  • For a spicier dish, increase the Cajun seasoning and red pepper flakes.
  • Leftovers can be stored in an airtight container in the fridge for up to 2 days.
