Carrot and Raisin Salad

Ingredients
  

  • 1 cup mayonnaise
  • 2 teaspoons curry powder
  • 2 teaspoons kosher salt
  • 1 teaspoon cayenne
  • 1 lemon Juice of
  • 1 lb carrots, peeled and shredded (about 4 cups)
  • 2 cups raisins
  • 1 cup fresh parsley, chopped

Method
 

  1. In a mixing bowl, combine the mayonnaise, curry powder, kosher salt, cayenne, and the juice of one lemon. Whisk the ingredients together until the mixture is smooth and well combined.
  2. Using a grater or food processor, peel and shred the carrots until you have about 4 cups. Transfer the shredded carrots to a large mixing bowl.
  3. Add the 2 cups of raisins to the bowl with the shredded carrots. The sweetness of the raisins will beautifully contrast with the savory dressing.
  4. Pour the dressing over the carrot and raisin mixture. Using a serving spoon, gently toss everything together until the carrots and raisins are evenly coated with the dressing.
  5. Finally, add the chopped fresh parsley to the salad. Fold it in gently to maintain the freshness and color.
  6. Cover the salad and refrigerate for at least 30 minutes before serving. This will allow the flavors to meld together beautifully. Serve chilled and enjoy every bite of your Carrot and Raisin Salad!

Notes

  • For a lighter version, substitute mayonnaise with Greek yogurt or vegan mayo.
  • Feel free to adjust the spice level by increasing or decreasing the cayenne.
