Cauliflower Pizza

Ingredients
  

  • 1 head cauliflower
  • 3 tablespoons water
  • 1 cup low-fat shredded mozzarella cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/2 cup pizza sauce (no sugar added)
  • 2 tablespoons diced green pepper
  • 2 tablespoons diced mushrooms
  • 2 tablespoons diced red onion
  • 2 tablespoons sliced black olives

Method
 

  1. Step 1: Preheat your oven to 425°F (220°C). Remove the leaves and stems from the cauliflower and cut it into florets.
  2. Step 2: Place the cauliflower florets in a food processor and pulse until you achieve a fine, rice-like texture (about 15-20 seconds).
  3. Step 3: Transfer the processed cauliflower to a microwave-safe bowl. Add 3 tablespoons of water, cover, and microwave for about 4-5 minutes. Let it cool slightly.
  4. Step 4: Once cooled, use a clean kitchen towel or cheesecloth to wring out as much moisture as possible from the cauliflower.
  5. Step 5: In a large bowl, combine the drained cauliflower, egg whites, 1 cup of mozzarella cheese, garlic powder, oregano, basil, onion powder, and smoked paprika. Mix until well combined.
  6. Step 6: Line a baking sheet with parchment paper. Transfer the cauliflower mixture onto the parchment and shape it into a pizza crust, about 1/4 inch thick.
  7. Step 7: Bake the crust in the preheated oven for 25-30 minutes or until golden brown and crispy.
  8. Step 8: Once the crust is baked, remove it from the oven. Spread the pizza sauce over the crust, then top with the remaining mozzarella cheese, diced green peppers, mushrooms, red onion, and sliced olives.
  9. Step 9: Return the topped pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  10. Step 10: Let the pizza cool for a few minutes before slicing. Serve hot and enjoy!

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Freeze baked crust for up to 3 months; wrap tightly in plastic wrap and foil.
  • Reheat in the oven at 350°F (175°C) for about 10-15 minutes for the best texture.
