Cauliflower Tots

These Cauliflower Tots are a healthier twist on a classic snack! Crispy, cheesy, and oh so satisfying!

Ingredients
  

  • 3 cups shredded cauliflower (about half of a head; be sure to squeeze out excess moisture)
  • 1 teaspoon kosher salt (divided)
  • 4 oz. shredded sharp cheddar cheese (about 1 cup)
  • 1/2 cup cornmeal (bread crumbs or ground oats can be used as alternatives)
  • 1 large egg (acts as a binding agent)
  • 1 teaspoon dry ground mustard (adds a subtle tang)
  • 1/2 teaspoon black pepper (for a hint of spice)

Method
 

  1. Start by shredding your cauliflower. You can use a grater or a food processor to achieve this. Once shredded, place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
  2. In a large mixing bowl, combine the shredded cauliflower, 1/2 teaspoon of kosher salt, shredded cheddar cheese, cornmeal, egg, dry ground mustard, and black pepper. Mix everything together until well combined.
  3. Preheat your oven to 400°F (200°C). Using your hands, scoop out a small amount of the mixture and shape it into a tot form—think small cylinders or nuggets. Place them on the prepared baking sheet, leaving a little space between each one.
  4. Bake the cauliflower tots in the preheated oven for 25-30 minutes, or until they are golden brown and crispy on the outside. Be sure to flip them halfway through for even cooking.
  5. Once baked, remove the tots from the oven and let them cool for a few minutes. Serve them warm with your favorite dipping sauce.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the oven at 350°F (175°C) for about 10-15 minutes.
  • Freeze uncooked tots for up to a month; bake from frozen adding a few extra minutes.
