Chicken Chow Mein

Ingredients
  

  • 12 oz chow mein stir-fry noodles
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • ½ cup water
  • 1 pound chicken tenderloins or chicken breasts thinly sliced into bite-sized pieces
  • 2 teaspoons cornstarch
  • ½ teaspoon salt
  • 1 tablespoon vegetable oil
  • ¼ cup vegetable oil divided
  • 3 cups green cabbage thinly sliced
  • 2 stalks celery very thinly sliced
  • 2 cups shredded carrots
  • 6 cloves scallions dark and light green parts, cut into 1-inch pieces
  • 2 cloves garlic minced

Method
 

  1. Begin by cooking the chow mein stir-fry noodles according to the package instructions. Once cooked, drain and set them aside.
  2. In a bowl, mix the sliced chicken with cornstarch, salt, and half of the soy sauce. Allow it to marinate for about 15 minutes to absorb the flavors.
  3. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
  4. Add the marinated chicken to the skillet, cooking until it’s golden brown and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
  5. In the same skillet, add the remaining ¼ cup of vegetable oil. Toss in the minced garlic, followed by the sliced cabbage, celery, and shredded carrots. Stir-fry for about 3-4 minutes until the vegetables are tender yet crisp.
  6. Return the chicken to the skillet. Add the cooked chow mein noodles, remaining soy sauce, oyster sauce, sesame oil, and water. Toss everything together on high heat for another 2-3 minutes until everything is well combined and heated through.
  7. Finally, toss in the scallions and give it one last stir. Serve your Chicken Chow Mein hot, garnished with additional scallions if desired. Enjoy!

Notes

  • Customize with additional proteins like shrimp or tofu.
  • Add extra vegetables such as bell peppers or snap peas.
  • For a gluten-free version, use tamari instead of soy sauce.
