Chicken Fajita Wraps with Creamy Avocado Dip

Ingredients
  

  • 1 tablespoon olive oil
  • 1 package Flatout Flatbread (Multi-grain with Flax)
  • 1.5 cups cooked rice
  • 1 can black beans (15 oz., rinsed and drained)
  • 1.5 cups sharp cheddar cheese
  • Sour cream (for serving)
  • 1 medium avocado
  • 0.5 cup sour cream
  • 2 tablespoons mayonnaise
  • 3 tablespoons milk
  • 1-2 tablespoons lime juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon garlic powder

Method
 

  1. Start by heating the olive oil in a large skillet over medium-high heat. Cut your chicken into thin strips and season with fajita spices or simply salt and pepper. Add sliced bell peppers and onions to the skillet, cooking until the chicken is fully cooked and the veggies are tender.
  2. Prepare your rice according to package instructions. Heat the black beans in a small pot until warmed through.
  3. In a mixing bowl, combine avocado, sour cream, mayonnaise, milk, lime juice, salt, and garlic powder. Blend until smooth and creamy.
  4. Lay out a piece of Flatout Flatbread. Layer cooked rice, black beans, sautéed chicken, veggies, cheddar cheese, and a dollop of sour cream. Drizzle with creamy avocado dip.
  5. Roll up the Flatbread, tucking in the sides to create a neat wrap. Slice in half and serve with extra creamy avocado dip.

Notes

  • Swap sour cream for Greek yogurt for a lighter option.
  • Use whole grain or gluten-free wraps as needed.
  • Add more veggies like spinach or zucchini for extra nutrition.
