  • 2 large eggs slightly whisked
  • 2/3 cup all-purpose flour
  • to taste salt and pepper essential for seasoning
  • 2 3/4 cups panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 3/4 teaspoon paprika
  • 3 large chicken breasts cut into strips
  • to lightly coat olive oil cooking spray

Method
 

Instructions
  1. Start by cutting the chicken breasts into strips, about 1 inch wide.
  2. In one bowl, place the all-purpose flour seasoned with salt and pepper.
  3. In a second bowl, whisk the eggs until slightly frothy.
  4. In a third bowl, combine the panko breadcrumbs, grated Parmesan cheese, and paprika.
  5. Coat each chicken strip first in the flour mixture, then dip it into the whisked eggs, and finally roll it in the panko mixture.
  6. Place the breaded chicken goujons on a baking sheet lined with parchment paper, ensuring they are spaced apart.
  7. Lightly spray the goujons with olive oil cooking spray.
  8. Preheat your oven to 400°F (200°C) and bake the chicken goujons for 15-20 minutes, or until golden brown and cooked through.

Notes

  • For extra flavor, add herbs to the panko mixture.
  • Use spicy breadcrumbs for a kick!
