  • 1 2/3 cup all-purpose flour
  • 1/3 cup dark or Dutch-processed cocoa powder sifted
  • 1/4 cup black sesame powder or finely ground black sesame seeds
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter room temperature
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon soy sauce
  • 1 cup dark or semisweet chocolate chips
  • black sesame seeds for topping

Method
 

Directions
  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a medium bowl, whisk together the flour, cocoa powder, black sesame powder, baking powder, baking soda, and salt. Set aside.
  4. In a large mixing bowl, beat the butter, light brown sugar, and granulated sugar until light and fluffy.
  5. Add the eggs, vanilla extract, and soy sauce to the butter-sugar mixture and beat until well combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Gently fold in the chocolate chips until evenly distributed.
  8. Drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie, and sprinkle with black sesame seeds.
  9. Bake for about 10-12 minutes, until edges are set but centers are still soft.
  10. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • Use high-quality chocolate chips for better melting.
  • Ensure butter is at room temperature for easy creaming.
  • Drizzle melted chocolate over cooled cookies for an extra touch.
