  • 2 tablespoons Dutch process cocoa powder
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt

Method
 

  1. In a mixing bowl, add the chia seeds, Dutch process cocoa powder, and salt. Whisk these dry ingredients together until they are evenly combined.
  2. In a separate bowl, combine the plant-based milk, maple syrup, and vanilla extract. Whisk the mixture until the maple syrup is fully dissolved into the milk.
  3. Pour the wet mixture into the bowl with the dry ingredients. Use a whisk or a spoon to mix everything together thoroughly.
  4. Cover the bowl with a lid or plastic wrap and let it sit at room temperature for about 5-10 minutes.
  5. After the initial resting period, give the mixture another good stir to break up any clumps that may have formed.
  6. Transfer the pudding to a jar or container with a lid and place it in the refrigerator. Let it chill for at least 2 hours, or ideally overnight.
  7. Once the pudding has set, give it a good stir before serving. Top with your favorite toppings and enjoy!
