Ingredients
  

For the Crust:
  • 1.5 cups graham cracker crumbs
  • 5 tablespoons unsalted butter melted
For the Cookie Dough:
  • 5 tablespoons unsalted butter room temperature
  • 1/3 cup light brown sugar packed
  • 3 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 3/4 cup all-purpose flour
  • 1 cup chocolate chips
For the Cheesecake Filling:
  • 10 oz. cream cheese room temperature
  • 1/4 cup sugar
  • 1 large egg room temperature
  • 1 teaspoon pure vanilla extract

Method
 

Prepare the Crust:
  1. Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated. Press this mixture firmly into the bottom of your greased or parchment-lined baking pan to form a solid crust.
Bake the Crust:
  1. Place the crust in the preheated oven and bake for 8 minutes. Once baked, remove it from the oven and set aside to cool slightly.
Make the Cookie Dough:
  1. In another bowl, cream together the room temperature butter, brown sugar, and granulated sugar until light and fluffy. Add in the salt, vanilla extract, and flour, mixing until just combined. Fold in the chocolate chips. Set this cookie dough aside.
Prepare the Cheesecake Filling:
  1. In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add the sugar and mix well. Incorporate the egg and vanilla extract, mixing until just combined.
Assemble the Bars:
  1. Pour the cheesecake filling over the cooled graham cracker crust, spreading it evenly. Drop spoonfuls of the cookie dough on top of the cheesecake layer. You can gently swirl it with a knife for a marbled effect if desired.
Bake:
  1. Bake in the oven for 25-30 minutes, or until the edges are set and the center still has a slight jiggle. Allow the bars to cool at room temperature before transferring them to the refrigerator to chill for at least two hours.
Serve and Enjoy:
