Method
 

  1. If you’re baking cookies from scratch, preheat your oven and bake your chocolate chip cookies according to your favorite recipe. Allow them to cool slightly so they remain soft but sturdy enough to hold the marshmallow and chocolate. If using store-bought cookies, warming them slightly can enhance the gooey texture of the s’more.
  2. Using a campfire, grill, or kitchen torch, carefully toast your jumbo marshmallow until it’s golden brown on the outside and irresistibly gooey inside. If you’re indoors, a kitchen torch offers great control and safety.
  3. Place one chocolate chip cookie on your serving plate. Immediately set the toasted marshmallow on top, then add a piece of your favorite chocolate on the marshmallow. Top with the second cookie and gently press down to create the perfect sandwich. The warmth of the marshmallow will melt the chocolate, creating that classic s’mores gooeyness.
  4. Dig in right away while the marshmallow and chocolate are still warm and melty. This is a dessert best enjoyed fresh!
