Ingredients
  

  • 1/4 cup pure maple syrup
  • 1/4 cup light brown sugar
  • 4 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 5 cups old-fashioned rolled oats
  • 2 cups chocolate chips

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the pure maple syrup, light brown sugar, vanilla extract, salt, and vegetable oil. Whisk together until smooth.
  3. Add the old-fashioned rolled oats to the wet mixture and stir until evenly coated.
  4. Line a baking sheet with parchment paper. Pour the granola mixture onto the sheet and spread it out evenly.
  5. Bake for about 20-25 minutes, stirring halfway through, until golden brown.
  6. Once out of the oven, sprinkle chocolate chips over the top and let them melt slightly.
  7. Allow to cool completely, then break into clusters and store in an airtight container.

Notes

  • For a nutty flavor, add 1 cup of chopped nuts like almonds or pecans.
  • Swap vegetable oil for coconut oil for a tropical twist.
  • Store in an airtight container at room temperature for up to 2 weeks.
