Cilantro Chicken in Steps:
  1. Begin by combining the extra virgin olive oil, minced garlic, chopped cilantro, and sweet chili sauce in a mixing bowl. Use a whisk to blend all the ingredients until well incorporated.
  2. Place the trimmed chicken thighs into the bowl with the marinade. Ensure each piece is generously coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes.
  3. Preheat your oven to 400°F (200°C) while the chicken is marinating.
  4. Transfer the marinated chicken to an oven-safe baking dish or skillet, pouring the remaining marinade over the top. Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
