Ingredients
  

  • 1/2 cup Shortening
  • 3/4 cup Granulated Sugar
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 1 cup All-Purpose Flour
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Kosher Salt
  • 1 cup Chocolate Chips mini, or 1/2 cup regular
  • 1 cup Sweetened Coconut Flakes

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a mixing bowl, cream together the shortening and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add the egg and vanilla extract, mixing until well combined.
  5. In a separate bowl, whisk together the flour, baking powder, and salt, then gradually add to the wet mixture.
  6. Fold in the mini chocolate chips and sweetened coconut flakes gently.
  7. Scoop out dough onto the prepared baking sheet, leaving space between each ball.
  8. Bake for 10-12 minutes, until edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
