Ingredients
  

For the Cookie Bars:
  • 2/3 cup coconut oil softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 tablespoon vanilla extract
  • 1 teaspoon coconut extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
For the Frosting:
  • 3 tablespoons coconut oil for frosting
  • 1 pinch salt for frosting
  • 2 1/2 cups powdered sugar
  • 1 tablespoon vanilla extract for frosting
  • 1/2 teaspoon coconut extract for frosting
  • 2 tablespoons coconut milk or almond milk, or soy, or regular/nonfat milk
  • 1/2 cup shredded sweetened coconut plus more for garnish

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: Grease an 8x8 inch or 9x9 inch baking pan with coconut oil or line it with parchment paper.
  3. Step 3: In a large mixing bowl, beat together coconut oil and granulated sugar until smooth and creamy. Add in egg, vanilla extract, and coconut extract. Mix until fully combined.
  4. Step 4: In another bowl, whisk together flour, baking soda, cream of tartar, and salt.
  5. Step 5: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Step 6: Spread the batter evenly into the prepared baking pan. Bake for about 20-25 minutes, or until the edges are lightly golden.
  7. Step 7: Once baked, let it cool on a wire rack before frosting.
  8. Step 8: In a mixing bowl, combine coconut oil, a pinch of salt, powdered sugar, vanilla extract, coconut extract, and coconut milk. Mix until smooth.
  9. Step 9: Once the bars are completely cooled, spread the frosting evenly over the top and sprinkle with shredded sweetened coconut.
  10. Step 10: Cut into squares, serve, and enjoy!

Notes

  • Store bars in an airtight container at room temperature for up to 5 days.
  • Freeze wrapped tightly for up to 3 months.
