Instructions
- Start by crumbling the sugar cookies into fine crumbs. You can do this by placing the cookies in a food processor or putting them in a zip-top bag and crushing them with a rolling pin. The finer the crumbs, the smoother your truffles will be.
- In a mixing bowl, combine the crumbled cookies with softened cream cheese, unsalted butter, and vanilla extract. Use a spatula or your hands to mix until everything is well combined and forms a dough-like consistency.
- Using your hands, scoop out small portions of the mixture and roll them into balls about 1 inch in diameter. Place the shaped truffles on a parchment-lined cookie sheet. Once all the mixture is shaped, refrigerate for about 30 minutes to firm them up.
- While the truffles are chilling, melt the vanilla candy coating according to the package instructions. Make sure to stir it until smooth to avoid any lumps.
- Once the truffles are chilled, dip each one into the melted candy coating using a fork or dipping tool. Allow any excess coating to drip off, then place the coated truffles back on the parchment-lined sheet.
- Before the coating hardens, sprinkle each truffle with small sprinkles for a festive touch. This step adds color and fun, making your Cookie Truffles even more appealing!
- Once all the truffles are coated and decorated, place them back in the refrigerator for about 15-20 minutes or until the candy coating is firm. After that, they are ready to be enjoyed!
