Ingredients
  

For the Cookies:
  • 2 sticks unsalted butter softened
  • 8 oz small-curd cottage cheese
  • 1 unit lemon zest of
  • 2.25 cups all-purpose unbleached flour
  • 1/4 tsp baking powder
  • 5 Tbsp granulated sugar

Method
 

Baking Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large mixing bowl, combine the softened unsalted butter and granulated sugar. Beat until light and fluffy, about 2-3 minutes.
  3. Step 3: Add the small-curd cottage cheese and lemon zest to the mixture. Mix until well combined.
  4. Step 4: In another bowl, whisk together flour and baking powder. Gradually add to the wet ingredients, folding gently.
  5. Step 5: Using a cookie scoop or tablespoon, drop dollops of dough onto a baking sheet lined with parchment paper.
  6. Step 6: Bake for 12-15 minutes, or until edges are lightly golden.
  7. Step 7: Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes
