Ingredients
  

  • 16 ounces store-bought gnocchi The star of the dish! Soft and pillowy.
  • 1-2 tablespoons butter Adds richness and depth to the sauce.
  • ¾ cup pesto Use your favorite store-bought or homemade.
  • ½ cup heavy cream Makes the sauce creamy and luxurious.
  • Salt & Pepper to taste.

Method
 

  1. Bring a large pot of salted water to a boil. Add the store-bought gnocchi and cook according to package instructions, about 2-3 minutes or until they float. Drain and set aside.
  2. In a large skillet over medium heat, melt 1-2 tablespoons of butter until foamy and fragrant, but not browned.
  3. Stir in the pesto and heavy cream, mixing well. Simmer gently for about 2-3 minutes, stirring occasionally until it thickens slightly.
  4. Add the cooked gnocchi to the skillet and gently toss to coat them in the sauce.
  5. Taste and season with salt and pepper as needed. Serve immediately, garnished with extra pesto, grated cheese, or fresh basil if desired.

Notes

  • For a dairy-free option, use coconut cream and dairy-free butter.
  • Make it gluten-free by using gluten-free gnocchi.
  • Add sautéed vegetables like spinach or cherry tomatoes for extra nutrition.
  • To spice it up, add red pepper flakes to the sauce.
  • Store leftovers in the refrigerator for up to 3 days.
