- In a large mixing bowl, add 2 cups of creamy peanut butter and 2 tablespoons of pure maple syrup or honey. Stir until the mixture is smooth and well combined.
- Gradually fold in 3 cups of rice cereal to the peanut butter mixture. Use a spatula or wooden spoon to gently mix until the cereal is evenly coated.
- Add 1 teaspoon of vanilla extract and 1/4 cup of chopped pecans to the mixture. Stir until everything is thoroughly combined.
- Using your hands, scoop out small amounts of the mixture and roll them into balls about 1 inch in diameter. Place them on a parchment-lined baking sheet as you go.
- In a microwave-safe bowl, melt 2 cups of dark chocolate in 30-second intervals, stirring in between, until smooth.
- Once the chocolate is melted, take each peanut butter ball and dip it into the chocolate, ensuring it's fully coated. Use a fork to lift it out and tap off the excess chocolate.
- Return the chocolate-coated balls to the baking sheet and place them in the refrigerator for about 30 minutes to set. Once set, they are ready to enjoy!
Notes
- Store in the fridge for up to a week.
- Try adding dried fruit or shredded coconut for extra flavor.
- Freeze uncoated balls for up to 3 months for a quick snack.
