Ingredients
  

For the Crust:
  • 1 1/2 cups graham cracker crumbs for a buttery and crunchy crust.
  • 3 1/2 tablespoons granulated sugar to sweeten the crust.
  • 6 tablespoons unsalted butter melted, to bind the crumbs together.
For the Cheesecake Filling:
  • 32 ounces cream cheese softened, the star of the cheesecake.
  • 1 1/3 cups granulated sugar for the creamy filling.
  • 2 vanilla beans seeds scraped, for rich vanilla flavor.
  • 1/2 cup sour cream adds creaminess and a slight tang.
  • 4 large eggs room temperature, for structure and creaminess.
  • 1 1/2 teaspoons vanilla extract to enhance the vanilla flavor.
  • 1/4 cup granulated sugar for topping, to create the signature brûlée crust.

Method
 

Crme Brle Cheesecake: From Prep to Plate
  1. Step 1: Prepare the Crust. Preheat your oven to 325°F (163°C). In a mixing bowl, combine the graham cracker crumbs, 3 1/2 tablespoons of granulated sugar, and melted butter. Press this mixture into the bottom of the springform pan. Bake for about 10 minutes, then let it cool slightly.
  2. Step 2: Make the Cheesecake Filling. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in 1 1/3 cups of sugar. Add the vanilla bean seeds, sour cream, eggs, and vanilla extract. Mix on low speed until just combined.
  3. Step 3: Bake the Cheesecake. Pour the filling over the cooled crust. Bake for 55-60 minutes, until edges are set but center jiggles slightly. Turn off oven and leave cheesecake inside for an hour to cool.
  4. Step 4: Cool and Chill. Once cooled, let it sit at room temperature for at least an hour. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight.
  5. Step 5: Prepare the Topping. Evenly sprinkle 1/4 cup of sugar over the top. Using a kitchen torch, caramelize the sugar until golden brown. Allow to cool before slicing.
