Start by washing your red baby potatoes thoroughly. Quarter them and set them aside. Next, dice the green and red bell peppers, as well as the yellow onion. Don’t forget to mince the garlic!
In your Crock-Pot, add the quartered potatoes, diced bell peppers, diced onion, and minced garlic. Give everything a gentle stir to combine.
Sprinkle the seasoned salt and smoked paprika over the vegetable mixture. Then, add the diced unsalted butter and olive oil.
Add Kosher salt and black pepper to taste.
Cover your Crock-Pot and set it to cook on low for 6-8 hours or on high for 3-4 hours.
Once the cooking time is up, give the potatoes a good stir. Serve them warm with your favorite toppings.
