  • 1/2 cup dairy-free butter softened
  • 1/2 cup brown sugar
  • 1/4 cup superfine sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup dairy-free chocolate chips

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  3. In another large bowl, cream together the softened dairy-free butter, brown sugar, and superfine sugar until light and fluffy.
  4. Add in the egg and vanilla extract, mixing until fully combined.

  6. Fold in the dairy-free chocolate chips, ensuring they are evenly distributed throughout the dough.
  7. Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet.
  8. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack.
