Ingredients

For the Crust:
  • 1 1/4 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup melted butter
For the Filling:
  • 8 ounces dark chocolate
  • 3/4 cup heavy cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Equipment

  • Mixing bowls
  • 9-inch pie dish
  • Whisk
  • Rubber spatula
  • Double boiler or microwave-safe bowl
  • Electric mixer (optional)

Method

Instructions:
  1. Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). This ensures that your crust will bake evenly.
  2. Step 2: Make the Graham Cracker Crust
In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture resembles wet sand.
  3. Step 3: Press the Crust into the Pie Dish
Pour the graham cracker mixture into the pie dish and press it firmly into the bottom and up the sides.
  4. Step 4: Bake the Crust
Bake the crust in the preheated oven for about 8-10 minutes, or until it is lightly golden. Remove it from the oven and allow it to cool completely.
  5. Step 5: Prepare the Chocolate Filling
While the crust cools, melt the dark chocolate using a double boiler or microwave. Stir until smooth.
  6. Step 6: Mix the Filling Ingredients
In a mixing bowl, combine the heavy cream, eggs, vanilla extract, and a pinch of salt. Whisk until well combined. Slowly pour in the melted chocolate and whisk until smooth.
  7. Step 7: Pour the Filling into the Crust
Once the crust is cool, pour the chocolate filling into the prepared crust. Smooth the top with a spatula.
  8. Step 8: Bake the Pie
Bake the pie in the oven for 25-30 minutes, or until the filling is set around the edges but slightly jiggly in the center.
  9. Step 9: Cool and Chill
Remove the pie from the oven and allow it to cool at room temperature for about an hour. Then, refrigerate it for at least 4 hours, or overnight.

Notes

  • Store leftover pie in the refrigerator for up to 5 days.
  • Freeze before baking for up to 3 months; bake from frozen.
  • Reheat gently in a 300°F oven for 10-15 minutes if desired warm.
