  • 2 small or 1 large chicken breast (cut into 1-inch cubes)
  • 1 cup broccoli florets
  • 1 cup bell peppers (sliced or chopped, colors of choice)
  • 1 small zucchini (sliced)
  • 1/2 cup tomatoes (sliced into large chunks or grape tomatoes)
  • 1/2 cup onion (sliced or chopped)
  • 1 tablespoon olive oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder (or fresh minced garlic)
  • 1 teaspoon paprika (optional)

Method
 

Cooking Instructions:
  1. Step 1: Preheat the Oven. Begin by preheating your oven to 400°F (200°C). This ensures your packets cook evenly and thoroughly.
  2. Step 2: Prepare the Ingredients. In a mixing bowl, add the cubed chicken breasts. Next, throw in the broccoli florets, bell peppers, zucchini slices, tomato chunks, and onion.
  3. Step 3: Season the Mixture. Drizzle the olive oil over the chicken and veggies. Sprinkle the Italian seasoning, garlic powder, paprika (if using), salt, and pepper. Toss everything together until well coated.
  4. Step 4: Create the Foil Packets. Cut large pieces of aluminum foil (about 12x12 inches) and place a portion of the chicken and veggie mixture in the center of each piece. Fold the foil over the filling, sealing it tightly to create a packet.
  5. Step 5: Bake in the Oven. Place the foil packets on a baking sheet and transfer them to the preheated oven. Bake for 25-30 minutes.
  6. Step 6: Serve and Enjoy. Once done, carefully open the foil packets (watch out for steam!) and serve warm.
