In a mixing bowl, combine the tamari, rice vinegar, pure maple syrup, garlic powder, and onion powder. Whisk until well blended, creating a savory marinade.
Once pressed, cut the tofu into bite-sized cubes or rectangles.
Add the tofu cubes to the marinade, ensuring each piece is well coated. Let it marinate for at least 15 minutes.
Preheat your oven to 400°F (200°C).
Line your baking sheet with parchment paper and arrange the marinated tofu in a single layer.
Bake the tofu for 25-30 minutes, flipping halfway through until golden brown and crispy.
Once baked, let the tofu cool slightly and serve warm, garnished with sesame seeds, sliced green onion, chives, and red pepper flakes.
