Easy Banana Muffins

Ingredients
  

  • 2 large eggs beaten
  • 140 g all-purpose flour
  • 2 tablespoons Dutch cocoa powder good-quality
  • 2 tablespoons honey favorite
  • 120 ml light extra virgin olive oil
  • 2 very ripe bananas mashed
  • 1 teaspoon baking powder

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. Grease your muffin tin with a little olive oil or line it with muffin liners.
  3. In a large mixing bowl, combine the beaten eggs, mashed bananas, honey, and light extra virgin olive oil. Whisk until smooth.
  4. In a separate bowl, mix the all-purpose flour, Dutch cocoa powder, and baking powder. Stir until evenly distributed.
  5. Gradually add the dry ingredients into the wet ingredients. Gently fold until just combined.
  6. Using a spoon, evenly distribute the batter into the prepared muffin tins, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Ensure bananas are very ripe for maximum sweetness.
  • Do not over-mix the batter to avoid dense muffins.
  • Check for doneness a few minutes before the timer goes off.
  • If using liners, opt for good quality to prevent sticking.
