Preheat your oven to 180°C (350°F).
Grease your muffin tin with a little olive oil or line it with muffin liners.
In a large mixing bowl, combine the beaten eggs, mashed bananas, honey, and light extra virgin olive oil. Whisk until smooth.
In a separate bowl, mix the all-purpose flour, Dutch cocoa powder, and baking powder. Stir until evenly distributed.
Gradually add the dry ingredients into the wet ingredients. Gently fold until just combined.
Using a spoon, evenly distribute the batter into the prepared muffin tins, filling each cup about 2/3 full.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Let cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.
