Ingredients
  

  • 1 cup creamy peanut butter
  • 1 cup butter softened
  • 2 teaspoons vanilla extract
  • 6 cups powdered sugar
  • 4 cups semisweet chocolate chips

Method
 

  1. In a mixing bowl, combine the creamy peanut butter, softened butter, and vanilla extract. Use an electric mixer to blend until smooth.
  2. Gradually add the powdered sugar, mixing on low speed until fully incorporated.
  3. Scoop out portions of the mixture and roll them into balls, about 1 inch in size. Place them on a baking sheet lined with parchment paper.
  4. Refrigerate the balls for about 30 minutes, or until firm.
  5. Melt the semisweet chocolate chips in a microwave-safe bowl or over a double boiler until smooth.
  6. Dip each peanut butter ball into the melted chocolate, coating completely except for a small portion on top.
  7. Allow the chocolate coating to set at room temperature or place the baking sheet in the refrigerator.

Notes

  • Keep buckeyes in an airtight container in the refrigerator for up to two weeks.
  • They can be frozen for up to three months, layered between parchment paper.
