  • 1 tube flaky dinner rolls (110-count)
  • canola oil (for frying)
  • 2 cups refried beans (warmed up)
  • 2 avocados (peeled, pitted, and diced)
  • 3 cups finely shredded Romaine lettuce
  • 1 cup shredded sharp cheddar cheese
  • 1 cup diced tomatoes
  • 1 cup sour cream (divided)
  • 2-3 green onions (diced)
  • 1 tsp chipotle chile peppers (in adobo sauce, minced)

Method
 

  1. Start by preheating your frying oil in a large frying pan or deep fryer over medium heat. While the oil heats, open the tube of flaky dinner rolls and separate the rolls. Flatten each roll slightly with your hands to form a disc shape. This will help them fry evenly.
  2. Once the oil is hot, carefully place a few flattened rolls into the oil. Fry each piece for about 1-2 minutes on each side, or until they turn a beautiful golden brown. Remove them from the oil using a slotted spoon and place them on a plate lined with paper towels to drain any excess oil.
  3. In a saucepan, gently warm the refried beans over low heat. Stir occasionally to ensure they don’t stick to the bottom of the pan.
  4. Once your fry bread is ready and the beans are warm, assemble your Easy Fry Bread Navajo Tacos! Start with a piece of fry bread as your base. Spread a generous layer of warm refried beans over the top.
