  • 1 cup water
  • 1 cup peanuts (no skin) raw or roasted, unsalted
  • 2 tablespoons butter softened
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

  1. Step 1: Prepare Your Baking Sheet - Line a baking sheet with parchment paper and set it aside.
  2. Step 2: Combine Ingredients in a Saucepan - In a heavy-bottomed saucepan, combine the sugar, light corn syrup, salt, and water. Stir over medium heat until the sugar dissolves.
  3. Step 3: Heat Until Golden - Attach the candy thermometer and boil without stirring until it reaches 300°F (hard crack stage), about 10-15 minutes.
  4. Step 4: Add Peanuts - Stir in the peanuts and continue to cook until it reaches 310°F (deep amber color).
  5. Step 5: Stir in Butter and Vanilla - Remove from heat and stir in the butter, vanilla extract, and baking soda.
  6. Step 6: Pour onto Baking Sheet - Immediately pour onto the prepared baking sheet and spread it out evenly.
  7. Step 7: Cool and Break - Allow to cool completely, then break into pieces.

Notes

  • Store in an airtight container at room temperature for up to two weeks.
  • For softer texture, rewarm in the microwave on low power.
