Ingredients
  

For the Pie Filling:
  • 8 ounces cream cheese softened
  • 3.4 ounces pistachio Jell-O instant pudding mix
  • 20 ounces crushed pineapple with juice
  • 1 cup miniature marshmallows
  • 8 ounces Cool Whip or heavy whipping cream
  • 1 prepared pie crust Nilla Wafer Pie Crust or graham cracker crust
  • 1 cup heavy whipping cream for topping
  • 1/4 cup powdered sugar to sweeten topping
  • 1/4 cup chopped pistachios for garnish
  • to taste Maraschino cherries optional

Method
 

Preparation Steps:
  1. Start by preparing your pie crust. If you’re using a store-bought crust, simply remove it from its packaging. If you prefer to make your own, crush Nilla wafers or graham crackers and combine them with melted butter. Press the mixture firmly into a pie pan and chill in the refrigerator for about 10 minutes to set.
  2. In a large mixing bowl, beat the softened cream cheese with a hand mixer until it’s smooth and creamy.
  3. Next, sprinkle the pistachio Jell-O instant pudding mix into the bowl with the cream cheese. Mix well until fully combined.
  4. Add the crushed pineapple (with juice) to the mixture. Stir until all ingredients are well blended.
  5. Gently fold in the miniature marshmallows. In a separate bowl, whip the Cool Whip (or heavy whipping cream) to stiff peaks. Carefully fold the whipped cream into the pistachio mixture.
  6. Once everything is combined, pour the pistachio filling into the prepared pie crust. Spread it evenly using a spatula and smooth out the top.
  7. Cover the pie with plastic wrap and refrigerate for at least 4 hours, or until set.
  8. When you’re ready to serve, whip the heavy cream with powdered sugar until stiff peaks form. Spread the whipped cream over the top of the chilled pie.
  9. Sprinkle chopped pistachios over the whipped cream for garnish and serve with maraschino cherries.
