Ingredients
  

For the Eel Sauce:
  • 1/2 cup Soy Sauce
  • 1/2 cup Sugar
  • 1/2 cup Mirin

Method
 

Directions:
  1. In a small saucepan, combine the soy sauce, sugar, and mirin.
  2. Place the saucepan over medium heat. Stir the mixture gently until the sugar dissolves completely.
  3. Allow the mixture to come to a gentle simmer. Keep stirring occasionally to prevent burning.
  4. Let the sauce simmer for about 10-15 minutes, or until it thickens to your desired consistency. Remember, it will thicken further as it cools.
  5. Remove the saucepan from heat and allow the eel sauce to cool. Once cooled, transfer it to a storage container.

Notes

  • For a spicy kick, add a teaspoon of sriracha or chili paste.
  • Incorporate minced garlic for a robust flavor.
  • Store in an airtight container in the refrigerator for up to two weeks.
