Start by peeling your hard-boiled eggs. Tap the eggs gently on a hard surface to crack the shell and roll them to loosen the shell. Rinse under cold water.
Place the peeled eggs in a mixing bowl. Mash the eggs to your desired level of chunkiness using a fork.
Spoon in the mayonnaise over the mashed eggs. Mix well until the eggs are evenly coated.
Sprinkle salt and pepper to taste. Adjust as needed.
Fold in the sliced olives and diced sweet onion.
