- Start by taking your two slices of whole-wheat bread. Using a cookie cutter or the rim of a glass, cut a circular hole in the center of each slice. Set the cut-out pieces aside; you can toast them alongside the bread to enjoy later.
- Place your frying pan over medium heat. Add the 2 tablespoons of unsalted butter and let it melt, swirling the pan to coat the bottom evenly. The butter should be bubbly but not browned.
- Once the butter is melted, place the slices of bread in the pan, toasting them for about 2-3 minutes until they are golden brown on the bottom.
- After the bread is toasted, carefully flip the slices over. Now, crack an egg into each of the holes. Season with salt and freshly ground black pepper to taste.
- Allow the eggs to cook for about 2-4 minutes, depending on how runny you like your yolks. If you prefer your eggs more well-done, cover the pan with a lid for the last minute to help cook the top of the egg.
- Once the eggs are cooked to your liking, carefully slide the Eggs in a Basket onto a plate. Garnish with freshly chopped chives for a pop of color and flavor. Serve immediately with the toasted bread cut-outs on the side.
