Ingredients
  

  • 1 pound salmon (about 1" thick, skin removed)
  • Salt & pepper (to taste)
  • 1 tablespoon olive oil
  • 2 tablespoons butter (divided)
  • 4 cloves garlic (minced)
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 tablespoon chopped fresh parsley (for garnish)

Method
 

  1. Start by cutting your salmon into bite-sized pieces, roughly 1-2 inches in size.
  2. Season your salmon pieces generously with salt and pepper on both sides.
  3. In a large skillet, heat the olive oil over medium-high heat.
  4. Carefully place the salmon bites in the skillet, cook for 2-3 minutes on each side.
  5. In the same skillet, reduce the heat to medium and add 2 tablespoons of butter.
  6. Add the minced garlic and sauté for about 30 seconds, until fragrant.
  7. Stir in the lemon juice, mixing it well with the garlic butter.
  8. Return the cooked salmon bites to the skillet, gently tossing them in the garlic butter sauce.
  9. Remove from heat and sprinkle with chopped parsley. Serve warm.

Notes

  • Store leftovers in an airtight container for up to 2 days.
  • Reheat gently in a skillet over low heat to prevent rubberiness.
  • Enjoy cold in salads or grain bowls for a quick meal.
