Ingredients

  • 1.5 pounds sirloin steak (or ribeye, strip steak, or another tender cut)
  • Salt & pepper to taste
  • 1 tablespoon olive oil
  • 4 tablespoons butter (1/2 stick) divided
  • 4-5 cloves garlic minced
  • 1 tablespoon chopped fresh parsley for garnish

Equipment

  • Large skillet
  • Cutting board
  • Sharp knife
  • Tongs
  • Meat thermometer

Method

Preparation Steps
  1. Start by gathering all your ingredients. Cut the steak into bite-sized cubes (about 1-inch pieces) and season generously with salt and pepper. Mince your garlic and chop the parsley, setting these aside for later.
  2. Place your large skillet over medium-high heat and add the olive oil. Allow the oil to heat until it shimmers, indicating it’s ready for cooking.
  3. Add the steak cubes to the hot skillet in a single layer, making sure not to overcrowd the pan. Sear for about 2-3 minutes on each side, or until they reach your desired level of doneness. For medium-rare, aim for an internal temperature of 130°F.
  4. Once the steak bites are cooked to perfection, reduce the heat to medium. Push the steak to the side of the skillet and add 3 tablespoons of butter and the minced garlic to the center. Sauté the garlic for about 30 seconds until fragrant, then mix it with the steak bites to coat them in the flavorful butter.
  5. Remove the skillet from heat and stir in the remaining tablespoon of butter until melted. Sprinkle the chopped parsley over the steak bites for a pop of color and freshness. Serve immediately with toothpicks for easy eating or alongside your favorite sides.

Notes

  • For a different flavor, try adding sliced mushrooms to the skillet.
  • Pair with a fresh salad or roasted vegetables for a complete meal.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
