Ingredients
  

For the Chicken:
  • 1 pound boneless skinless chicken breasts cubed
  • 1 teaspoon garlic salt
  • 1 teaspoon ground black pepper
  • 4 cloves garlic minced
For the Rice:
  • 1 cup dry white rice
  • 3 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • ½ cup freshly grated Parmesan cheese

Method
 

Cooking Steps:
  1. Begin by seasoning the cubed chicken breasts with garlic salt and black pepper. Make sure to coat the chicken evenly so every bite is flavorful.
  2. In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the seasoned chicken. Sauté for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic. Sauté for about 1 minute, or until fragrant, being careful not to burn it.
  4. Add the dry rice to the skillet and stir it with the garlic for about 2 minutes. This will toast the rice slightly and enhance its flavor.
  5. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the rice is tender and has absorbed the liquid.
  6. Once the rice is cooked, stir in the heavy cream, fresh spinach, and grated Parmesan cheese. Fold in the browned chicken and cook for an additional 2-3 minutes until the spinach is wilted and everything is heated through.
  7. Spoon the Garlic Chicken and Rice onto plates, garnish with extra Parmesan if desired, and serve hot. Enjoy the deliciousness of this comforting dish!
