  • 1 cup packed light brown sugar
  • 1 cup granulated white sugar
  • 2 large eggs well beaten
  • 1 tablespoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 3 cups old-fashioned oats do not use quick-cooking oats
  • 3/4 cup chopped walnuts or raisins

Method
 

  1. Preheat your oven to 350°F (175°C). This ensures that the cookies bake evenly and come out perfectly golden.
  2. In a large mixing bowl, cream together the shortening, light brown sugar, and granulated sugar until the mixture is light and fluffy.
  3. Beat in the well-beaten eggs and vanilla extract. Mix until everything is fully combined.
  4. In a separate bowl, whisk together the all-purpose flour, salt, baking soda, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Gently fold in the old-fashioned oats and your choice of chopped walnuts or raisins.
  7. Using a cookie scoop or tablespoon, drop heaping spoonfuls of dough onto a parchment-lined baking sheet.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a cooling rack.

Notes

  • For a lower glycemic option, replace white sugar with coconut sugar.
  • Substitute shortening with coconut oil or unsalted butter for a different flavor.
  • Freeze cookies in a single layer for up to 3 months for longer storage.
